Japanese style curry with rice

A comforting and flavorful Japanese-style curry made with tender pork, potatoes, and carrots in a rich curry sauce. This slow-cooker recipe creates a hearty, satisfying meal that's perfect served over hot rice. The mild curry sauce is approachable for those new to Japanese curry!

Instructions

  1. 1

Cut pork into small chunks, like stew meat.

  2. 2

Brown pork with onion in a skillet over medium-high heat.

  3. 3

Transfer pork and onions to a slow cooker and add 4 cups water.

  4. 4

Cook on low for 3-4 hours.

  5. 5

Add potatoes and carrots and cook an additional 2 hours on high.

  6. 6

Add 1 cup of water if all vegetables are not covered.

  7. 7

Ten minutes before serving, break curry sauce into small pieces and place in slow cooker.

  8. 8

Stir occasionally as curry melts, for 10 minutes or until all curry mix has dissolved.

  9. 9

    Serve over hot cooked rice.

  10. 10

**Important Note:** Curry sauce will yellow any plastic it touches. Best to use either a dark plastic or metal spoon to stir and serve.

**Curry Heat Levels:** Curry sauce is available in mild, medium, and hot. If you are not used to strong spices, try the mild first. The others are quite strong!
